Easy Caesar Salad Dressing

A good Caesar Salad is a recipe everyone should have internalized. It’s one of those classic dishes that can be dressed up or down and whose goodness far exceeds its humble ingredient list. If the idea of making an emulsification of raw egg yolk and oil (the traditional preparation) feels intimidating or just annoying, this recipe is for you – the Duke’s does all that for you, so all you need are the zippy, zesty seasonings (Worcestershire, Dijon mustard, garlic, lemon, and of course, anchovy) that lend Caesar its characteristic twang (a characteristic about which Duke’s knows plenty).

Ingredients
1 cup Duke’s mayonnaise
2 anchovies (or 1 teaspoon anchovy paste)
2 cloves garlic, smashed
1 teaspoon Worcestershire sauce
2 teaspoons Dijon mustard
Juice of ½ lemon
Salt and pepper to taste
Parmesan cheese, to serve
Directions
In the bowl of a food processor, combine all ingredients and process on low speed until fully combined. Taste and adjust seasoning as you see fit. To serve, toss lettuce in a bowl with dressing, adding a handful of parm to the bowl while dressing and another on top. Garnish with your favorite Caesar salad goodies – croutons, anchovies, more parm; you do you.
