- 4 cups cooked squash, drained
- 1/2 cup Duke's Mayonnaise
- 1/2 can cream of chicken soup
- 2 cups mozzarella cheese, grated
- 1 small onion, chopped, optional
- 2 eggs
- Stuffing mix
- 1/2 stock margarine, melted
- Cook squash and onion until done, drain well and mash.
- Combine with mayonnaise, eggs, cheese and soup.
- Pour into Pam sprayed 9×9" baking dish.
- Layer top with dressing mix and pour margarine across top.
- Bake at 300°F for 1 hour.
